It is different in that it is a book about chemicals, but it is not a chemistry book in the traditional sense. This book has a different purpose: that is, to answer your questions and provide information about all the chemicals you come in contact with every day. In the past we have done research for chemical reference books for professionals in the environmental and occupational health field.

In the course of doing research for books about workers' occupational exposure to chemicals, we became curious about how many of these chemicals we consumers contact in our lives and homes as ingredients in foods, cosmetics, and cleaning products. Many people have suggested that we use the actual brand names of products and list the hazards of the specific chemicals they contain. This would not be possible for several reasons. Many manufacturers consider their ingredients list to be proprietary information.

That means they do not divulge the formulations. Another reason this would not be feasible is that manufacturers frequently change the formulations of products to save money, increase effectiveness, or improve the product in some way.

Through the years, toxicologists, those who study chemicals and their effects, have come to some agreement on doses and their results. The following table is based on consumption by a lb person.

Many of the shows had call-in sessions after the interview during which the listeners and viewers could ask questions. The first part of this book is based on those questions and answers and is the source, or inspiration, for much of the material in this second edition. Many of the frequently asked questions FAQ are answered in this book. As a result, we want to thank readers and radio and television listeners and viewers for the idea of using this material for the new section.

The second part of the book is an alphabetical listing of chemicals that compose everyday products. Most of the chemical entries include a listing of synonyms. Some of the synonyms include a CAS number. The CAS Chemical Abstracts Service identification number is being used more frequently on consumer products because it is the surest means of identification when using reference sources. Readers frequently ask which is the greater danger: the risk of cancer from preservatives or the risk of sickness from bacteria that might be present in the food if preservatives are not used?

There is no simple answer. Consumers must educate themselves and make decisions about the risks. We hope this book will help people make those choices. What are chemicals used for in food? Many times they are used to replace flavorings, colorings, and vitamins lost in processing. Why do so many chemicals have long complicated names? The names are descriptions, or roadmaps, of the molecular formula. How is it that a chemical, such as hydrochloric acid, can be used in so many diverse ways?

For instance, it is used for hair bleaching, swimming pool chemicals, and in food processing. It depends on the concentration of the chemical. For instance, in food processing it is used in minute quantities to adjust the pH, the acidity, or alkalinity, of the product. Why is it some food packaging does not list what is inside?

There are some standard foods catsup, ice cream, and peanut butter, for example that do not require listing of ingredients unless nonstandard colors or chemicals are added. If chemical additives are so dangerous, why are they permitted in food? They are not dangerous for everyone. They do keep our food safer and cleaner. Because of allergies, sensitivities, and intolerances, some people must avoid them.

How many food, cosmetic, and cleaning products are in the supermarket? Twenty years ago there were ; now there are estimated to be 24, different products. What are indirect food additives? These are chemicals, usually preservatives, that are put into food packaging so they can migrate to the food.

What is the advantage to the manufacturer of putting preservatives in the food via packaging? The advantage is that the product has a longer shelf life and looks better more attractive to the consumer. What is the quantity of food additives we consume each year? It is estimated that we eat a total of pounds of additives a year. This would include sugar and salt. I have heard that fruits and vegetables are fumigated in trucks and rail cars to kill insects and bacteria. Is there some alternative to this?

One possibility would be food irradiation. Would the food that will be hit with gamma rays to kill insects and bacteria be radioactive? No, it will not. The vitamins A, B, C, and E may be destroyed in the process though. Will irradiated food have labels that indicate it has been irradiated? Tomatoes, onions, strawberries, and mushrooms will need that irradiation label.

In the past, spices, wheat, pork, and potatoes have not been identified as irradiated. While in England, I saw they used cyclamates. Why don't we use them in the U. Cyclamates are being studied here and may be approved in the future. We use saccharin in limited amounts but England does not. What is another chemical that is used in the U.

How many people are poisoned each year? There were nearly two million cases reported to poison control centers last year. Most were accidental poisonings of children under five. What was the major cause of poisonings of children under the age of five? In most cases the children consumed too many vitamin or mineral pills. Iron pills look like candies and are very toxic in excessive amounts. What are the symptoms of food allergy? The most common is skin rash or hives.

Other symptoms can include cramps, diarrhea, nausea, vomiting, sneezing, hay fever symptoms, and the most dangerous: anaphylactic shock. Which foods are the most allergenic? The most frequent offenders are peanuts, other nuts, soybeans, fish, shellfish, milk, and wheat. Whenever I start at a new doctor's office they inquire about food allergies.

Is this really necessary for them to know? It is important for the doctor and staff to know about your allergies. For instance, recently it was determined that people who are allergic to fruits such as avocados, bananas, kiwi, papaya, or peaches are frequently the same patients who are allergic to latex.

Of course latex is commonly used in medical offices. How could fruit allergy trigger the same things that trigger latex allergy? Latex is a natural product produced from the sap of the rubber tree in Brazil.

It is thought that proteins in the sap are similar to those in the fruits. What harmful effects could occur from a bad allergy attack?

The most serious allergy effect would be death from anaphylactic shock.
